Highlights from this season include: Warm smoked eel, Charlotte potato salad and celeriac remoulade with red wine and apple purée, Roast sea bream, fennel purée with mussel and artichoke barigoule and Coriander marinated pineapple with mandarin sorbet and a mint tuille.
